Has Nestlé lost its bearings? Their precisely 205-gram baking chocolate bars have left many dessert lovers scratching their heads. As these extra 5 grams seem to puzzle everyone from fondant makers to mousse and dessert architects, one might wonder what practical purpose they serve. Perhaps enough for a single madeleine shell?

Interestingly, these iconic dessert chocolate bars weren’t always marked at this weight. Until 2013, they tipped the scales at 250 grams. If they’ve shed about 45 grams, it wasn’t necessarily to keep our waistlines in check (a move of such generosity would be surprising) but rather to boost their own sales. You might have noticed that some recipes precisely require 250 grams of chocolate. Where previously one bar sufficed, now we find ourselves needing to buy two. Clever move, Nestlé.

Some less cynical folks offer different theories. One is the idea of precision. When melting chocolate squares in a double boiler or microwave, some invariably clings to the sides of the bowl. Even with diligent scraping. Thus, one could argue that the extra little square is meant to offset any such losses.

However, our grandmothers have a different explanation altogether. Valentine, who has been baking with her grandmother since she was a child, shares on her Instagram account: “Every time we baked a cake, she would give me the first square of chocolate. Of course, I took it without thinking much about it. And if you watch the beginning of the video, you’ll see my grandmother pulling the same trick!” It took her until now to understand why: “she explains that there are actually 5 grams to snack on, and there are 200 grams left for the cake”.

Therefore, the extra five grams in Nestlé chocolate bars do indeed serve a purpose. They keep the little ones patient until the cake is ready to come out of the oven and they can enjoy it at snack time… Definitely a safer option for their health than licking raw batter off a wooden spoon!

Ultimately, these additional five grams in Nestlé’s chocolate bars continue to raise questions. Some see it as a marketing ploy, others as a way to make up for losses during preparation. And maybe, just maybe, it’s a little treat to keep budding bakers occupied before snack time. An unverified hypothesis, but one that certainly brings a smile.
