The expert stresses the importance of preparing the custard mixture the day before. “A well-chilled mixture allows for a gentler coagulation of the eggs during oven baking,” she notes. This method cooks the eggs more evenly, resulting in a smoother, less grainy texture. Additionally, letting the mixture rest longer also benefits the flavor, giving vanilla (and other aromatics) ample time to infuse the mixture, enhancing its overall aroma.
Practically speaking, this means preparing your cream the day before, covering it directly with plastic wrap, and letting it rest overnight in the refrigerator. The next day, pour it into its mold (over a layer of pie crust or puff pastry, if using) and bake.
