What if you could go back for another piece of chocolate cake without dramatically increasing the calorie count? Using applesauce in her recipe, this Basque food creator treats herself to nearly two slices for the calories of one—without giving up that melt-in-your-mouth texture or the pleasure of chocolate.

It’s hard to stop at just one slice. Rich, moist, and packed with cocoa flavor, chocolate cake is one of those desserts that quickly tempts you to indulge. But between the butter, sugar, and a bar of baking chocolate, it can also add up fast on the calorie side.
Trimming the recipe without stripping away its appeal is exactly what Belqis Valsan, a recipe developer on Instagram, set out to do. Her trick ingredient is unsweetened applesauce, which replaces the fats normally used in the batter. Because it’s mostly water, applesauce brings moisture to the cake and helps keep it tender and fudgy, without needing butter or oil.
And the savings aren’t insignificant. With the same amounts of chocolate and eggs, this version cuts roughly 40% of the calories compared with a classic recipe that uses 100 g of butter and an equivalent amount of sugar. In practical terms, for a similar calorie intake you could enjoy about 1.7 slices of the applesauce cake versus a single slice of the traditional version. Nearly double the enjoyment without doubling the calorie bill.
To make it at home, melt 200 g of 70% dark chocolate in a bain-marie or briefly in the microwave, and preheat your oven to 350°F (175°C) on a conventional setting. Separate the whites from the yolks of 3 eggs. Mix the yolks with 150 g of unsweetened applesauce, then stir in the melted chocolate, 60 g of flour, and 5 g of baking powder. If you like a gentler vanilla hint, you can add a packet of vanilla sugar or a teaspoon of vanilla extract.
For a light, airy crumb, Belqis relies on a key step: whip the egg whites to stiff peaks and fold them into the batter in three additions. This method traps air within the mixture and prevents the finished cake from becoming too dense. Pour the batter into an 8-inch (20 cm) pan lined with parchment paper and bake. About 20 minutes will give you a gooey, fondant-style center; around 25 minutes yields a slightly more set, tender cake. Allow it to cool before slicing and keep any leftovers refrigerated.
In the end, the chocolate remains center stage while the applesauce works quietly behind the scenes to preserve that desirable moistness—so you can help yourself to an extra piece without too many guilty thoughts.
