“This is the best lemonade in the world. It really has something extra!” raves content creator Lou Elsener on Instagram. Her followers seem to agree: “Tried and loved it“; “Delicious!“; “Very refreshing!” They’re all talking about cherbet, a popular drink in Algeria that’s similar to our lemonade but with a few unique additions. To make it, Lou begins by peeling four lemons. She then blends the pulp with 1.5 liters of water, strains the mixture through a sieve, and transfers it back into the blender. She blends again with a small amount of sugar, four mint leaves, two tablespoons of orange blossom water for a floral hint, and… a glass of milk! Sounds odd? Yet, Algerians aren’t the only ones adding milk to their lemonade; it’s also a common practice in Brazil. The milk serves two purposes: it not only reduces the lemon’s acidity and bitterness but also makes the drink more quenching. Indeed, several studies have confirmed that milk hydrates better than water, thanks to its electrolyte content.
Surprisingly, the milk doesn’t alter the flavor of the lemonade; it merely thickens the texture a bit. Of course, you can always opt for plant-based milk if you prefer!
Good to Know: This lemonade can be stored in the refrigerator for up to 24 hours.
