From September to November, it’s time for your favorite fall fruit: the chestnut. Do you love eating them hot right after they’re cooked, sprinkled with a pinch of sea salt? However, what you might not enjoy as much is their preparation. First off, you’re never quite sure how to cook them. In the oven or on the stove, they tend to burst into pieces, and boiling them (usually taking about 30 minutes after the water boils) just feels too slow for your taste. Then, there’s the ordeal of peeling them. The skin doesn’t come off easily, and you often lose a lot of the flesh in the process… Don’t give up on your guilty pleasure: you just haven’t learned the right technique yet! With this farmer’s trick, the skin practically peels off by itself, and they’re ready to eat in record time.
So, what’s the best way to cook chestnuts? This was the simple question we asked our local farmer. His answer was just as straightforward: “In the oven, 15 minutes at 392°F (200°C)“. And isn’t there a risk of them exploding or drying out during cooking?, we asked. “If you prepare them correctly before baking, there won’t be any problems“, he assured us. Curiosity piqued, we tried the renowned little cross-cut on the tip before baking. Unfortunately, this didn’t have the desired effect: many chestnuts still burst, and those that survived were so tough and dry that peeling them was nearly impossible… “That’s normal, a small cut isn’t enough!“, the farmer explained. Before baking, he makes a cut all around the circumference of the chestnut. “You need to go all the way around with your knife horizontally“, he demonstrated. This way, the chestnuts no longer risk exploding, and they practically peel themselves by the end. “The skin lifts right off and they open on their own“, he added. After a successful test in the kitchen, we can confirm his method works. Now it’s your turn!
