- 500 grams of high-quality or homemade gnocchi
- 150 grams of smoked bacon bits
- 100 grams of frozen peas
- 15 to 20 cl of heavy cream
- 1 egg yolk
- A handful of walnut pieces
- Butter
- Salt and black pepper
- Shavings of Parmesan cheese

Cook the peas in boiling salted water for 5 minutes, drain them and quickly rinse under cold water to keep their vibrant green color… set aside. -

Brown the bacon bits in a skillet without any oil… set aside. Coarsely crush the walnut pieces with a pestle. Mix the heavy cream with the egg yolk. -

Boil the gnocchi in salted water for 3 to 4 minutes; they’re done when they float to the surface, drain them well. -
To Finish
Transfer the gnocchi to a large skillet with a bit of butter and sauté for a few minutes over medium heat… season lightly with salt and pepper. Add the bacon, peas, and cream-egg mixture. Cook over medium heat, stirring until everything is thoroughly heated… Serve immediately, sprinkled with walnut pieces and Parmesan shavings.
