Ingredients for a Lighter Lorraine Quiche
In this version, sour cream is replaced with 3% fat cottage cheese, a lighter and protein-rich alternative. The fat content is also significantly reduced by omitting the traditional pastry crust. Additionally, the inclusion of finely chopped onions adds prebiotic fibers, beneficial for digestion, the cook notes.
- 4 medium onions
- 150 g of ham strips
- 300 g of 3% fat cottage cheese
- 6 eggs
- 120 g of wholemeal flour
- 50 g of grated cheese
- Salt, pepper, nutmeg
Steps to Prepare the Lighter Lorraine Quiche
For this recipe, it is ideal to use a silicone mold, which will make unmolding easier.
- Preheat the oven to 350 °F.
- Peel and finely chop the onions using a knife or a food processor.
- In a mixing bowl, whisk the eggs with the cottage cheese, then gradually add the flour, mixing well.
- Season with salt, pepper, and nutmeg. Then, add the chopped onions, grated cheese, and ham strips, and mix well.
- Pour the mixture into a silicone mold (or a traditional mold lined with parchment paper).
- Bake for 45 minutes.
Allow the quiche to cool for a few minutes before unmolding. This quiche can be enjoyed hot or cold, paired with a green salad or a soup for a balanced meal.
Traditionalists from Lorraine might raise an eyebrow (since the authenticity of quiche Lorraine is often no joking matter).
