In the fridge or in the cupboard… Where should you store your chocolate bar to keep it in perfect condition when temperatures soar? Experts weigh in.
Whether it’s with coffee, as an afternoon snack, or stealthily after dinner, any excuse is good for sneaking a square or two of chocolate from the stash in the cupboard. However, as soon as the temperature rises, the chocolate starts to act up. If it doesn’t soften in its foil wrapper, it loses its glossy sheen and develops an odd white film. This might mistakenly lead someone to think it’s spoiled.
In most cases, however, the chocolate is still perfectly edible. But its sensory qualities, like shine and meltiness, are altered. Contrary to popular belief, its main enemy is not so much the heat itself but the fluctuations in temperature, which disrupt its delicate structure.
As explained by the brand Éthiquable on Instagram, when a chocolate bar experiences a heat spike, it undergoes what chocolatiers refer to as “fat bloom.” Due to the heat, the cocoa butter crystals become disorganized, gradually migrate to the surface, and then solidify as they cool. The result is a thin white layer.
To counteract this, the natural reaction might be to place the chocolate bar in the refrigerator. This solution fixes one problem but creates another. Unintentionally, it now promotes what’s known as “sugar bloom.” Here, moisture condenses on the surface and dissolves some of the sugar, which recrystallizes leaving behind a white residue and a slightly gritty texture.
The wisest option is to opt for a stable environment. Éthiquable recommends storing chocolate bars in a dry place, at a temperature between 12 and 18°C. A cool cellar is suitable if it’s clean, dry, and temperature-stable. If that’s not available, it’s best to choose the coolest cupboard in the house, away from light, heat, and sources of moisture. It’s also important to store them in an airtight container, which limits humidity fluctuations while preventing the chocolate from absorbing any surrounding odors to which it is particularly sensitive.
Ultimately, chocolate fears temperature roller coasters more than a heatwave. Before banishing it to the refrigerator as soon as the temperature spikes, it’s better to find a cool (but not too cool), dry, and shaded spot until things settle down…
