When the temperature soars, do you find it impossible to eat anything? This creamy zucchini soup with only two ingredients might just be the solution you need!

At 86°F in the shade, it’s not uncommon to feel less hungry. But there’s no need for concern. This is a natural adaptive response. During winter, our bodies need more energy to maintain internal temperature against the cold, a demand that diminishes in the summer. Moreover, digestion itself produces heat, adding to the already warm external temperatures and can slow down, which is part of why our appetites decrease. However, warmer weather does not mean our bodies don’t need nutrients. Skipping meals or fasting, especially for those who are more vulnerable, is definitely not advisable.

To avoid overloading the digestive system, a good approach is to eat smaller, more frequent meals throughout the day, focus on water-rich fruits and vegetables abundant in this season (nature knows best), and opt for cold dishes. So, put away the raclette and beef bourguignon until the cooler evenings return. However, keep your bowl and spoon handy. Not just for butternut squash soup. Gaspachos and other chilled soups like the one from Marjolaine, known on social media as @marjolainecooking, are also great choices. Her zucchini velouté is light yet creamy and is as easy to digest as it is to prepare, requiring only two basic ingredients.

Interested in trying it? Simply blend one cooked zucchini with 40g of cream cheese (like St Môret), add salt and pepper to taste, and voilà! For an added touch of freshness, Marjolaine includes a few mint leaves, but feel free to use another herb like basil or cilantro. Then, add a crunchy element with garlic croutons and toasted pine nuts. For a more intricate garnish, you can make Marjolaine’s homemade savory granola. Just combine 60g of oat flakes, 20g of crushed cashew nuts, 10g of black sesame seeds, 15g of powdered Parmesan, 10g of olive oil, one egg, and a pinch of salt. Spread it thinly on a baking sheet and bake at 356°F for 15 minutes, breaking it into pieces 5 minutes before it’s done.

This recipe is not only easy to make and digest but is also an excellent way to start a meal lightly. Sometimes, all it takes is a zucchini and a bit of cream cheese to spark your appetite.
