Preparing the Zucchini
Wash the zucchini without peeling. Dry them and cut into 1 cm thick slices or large cubes.

Cooking the Zucchini
Cook them for 15 to 18 minutes in 3 liters of boiling salted water. Drain in a colander and press them with a skimmer to extract excess water.

Preparing the Gratin
Transfer the zucchini to a buttered gratin dish. Coarsely chop them with a fork.

In a mixing bowl, beat the eggs into an omelette, add the cream, grated Gruyère cheese, salt, pepper, and sprinkle with grated nutmeg. -

Baking the Gratin
Pour this mixture over the zucchini, mix well and bake in a preheated oven for 15 minutes at 180°C (356°F).
