“Sometimes you come across an ingredient that seems like nature’s own trick: too good to be true, yet it delivers,” writes Chef Simon Auscher on his blog. He was also impressed by these noodles. It turns out they have numerous benefits: they contain only 30 calories per 100g cooked serving (compared to 130 calories for wheat pasta), they’re free of carbs, and they help manage hunger, blood sugar, and digestion. You might think there’s a catch… Well, not really. Their slightly rubbery texture might be unexpected, and before rinsing, they have a mild oceanic smell. “But once properly prepared, they become the perfect base for tasty sauces,” the chef notes. He’s referring to shirataki noodles, made from konjac—a fiber-rich Asian rhizome known for its appetite-suppressing properties. And getting your hands on them is easy, as they’re now available in most supermarkets, either in the World Cuisine or Health Food section.
To get started with shirataki noodles, just remember a few tips. First, they need to be well rinsed (unless you find a pre-rinsed, ready-to-use version). Then, boil them for 2 minutes. Since they don’t have much flavor on their own, they require a sauce. Here, the chef suggests dressing them with 1 tablespoon of white miso, 1 teaspoon of soy sauce, some mushrooms, and a bit of toasted sesame. That’s all it takes to enjoy a delightful meal! But feel free to get creative. Konjac noodles pair well with many different sauces, just like traditional pasta.
For a lighter option, try pairing them with roasted cherry tomatoes, fresh basil, and a bit of feta or shrimp. Sauces like pesto or bolognese also work well. Give them a try and see what you think!
