To enhance the flavor of bland strawberries, forget about drowning them in sugar: this method is far more effective!
Bright red, plump, and intoxicatingly fragrant in their packaging, these strawberries promised a delightful treat. Yet, what a deception! With the first bite, their shiny red exterior reveals a pale, under-sweet flesh with no flavor: the kind of strawberries that even the most lavish whipped cream could hardly redeem.
When faced with tasteless fruit, our first instinct is usually to pour sugar over them and let them sit for a few minutes, hoping to enhance their hidden flavors. However, sugar alone primarily acts as a cover-up: it softens and smooths but doesn’t really amplify the flavors.
Yet, there’s a much more effective way to transform disappointing strawberries: roasting them in the oven. This simple and effective technique is recommended by Julie Richardson, owner of the Bakery & Spice pastry shop. “Just toss them with a bit of sugar, spread them on a baking sheet lined with parchment paper, and roast at 375-400°F for 20 to 30 minutes,” she shares with Serious Eats.
At first, the idea might seem odd. Strawberries are typically thought to be fruits that should be kept away from heat. However, the oven works wonders here. As the fruit cooks, the water inside slowly evaporates. The natural sugars intensify, the flavors deepen, and the strawberries develop a soft, jam-like texture reminiscent of the finest homemade preserves. Their aroma becomes richer, rounder, almost caramelized in spots. As a final touch, Julie Richardson strongly recommends adding “a drizzle of lemon juice or vanilla” before serving.
Once roasted, these strawberries beautifully top off a creamy vanilla ice cream, yogurt, or panna cotta. They can also be stored in the refrigerator for several days and freeze well. Just a little heat was all it took to bring these strawberries back into the spotlight at dessert time.
