This bizarre French customer habit is driving shop owners crazy
Have you swapped out the classic French baguette for whole wheat bread? There’s an even more digestible and less calorific option that comes highly recommended by nutritionist Dr. Jean-Michel Cohen.
Whether it’s for spreading butter and jam at breakfast, sopping up gravy with dinner, or perfectly pairing with a slice of salami or a piece of camembert, it’s hard to imagine a meal without bread! According to data from the Federation of Bakery Entrepreneurs, 87% of French people surveyed in 2021 invite bread to their table most of the time, with 60% saying they eat it at every meal. Consumers are becoming increasingly discerning, paying particular attention to taste, traditional craftsmanship, and freshness.
While the variety of breads available in bakeries continues to expand, the traditional baguette remains a favorite, endorsed by 41% of respondents, closely followed by the classic baguette, popular among those under 45. Apart from these, whole grain, country, and cereal breads are also climbing the popularity charts. It’s worth noting that the love for sandwich bread, although very convenient but not so great from a nutritional standpoint, remains strong, with 86% of the panel still indulging in it…
While breads made from whole or wholemeal flour are favored by nutritionists, those made from wheat tend to irritate sensitive intestines. For this reason, among others, Dr. Jean-Michel Cohen strongly recommends switching to einkorn bread, which boasts multiple health benefits. “Firstly, it’s low in calories, 220 kcal per 100g,” states the doctor, compared to an average of 250 kcal for whole wheat bread. Great for those watching their weight! “Secondly, it’s high in protein, which is rare for bread,” he continues, with nearly 6g per 100g.
“Thirdly, it has an incredible lipid profile,” which consists of a balanced mix of good mono- and polyunsaturated fatty acids. It also contains satiating fibers, virtually no free sugars (rapid), and as a bonus, it contains less gluten, significantly improving its digestibility. “It’s the ultimate health bread,” concludes the nutritionist. And from a purely taste perspective? With its warm flavors that vaguely remind one of gingerbread, you’re certainly not losing out…
It’s hard to envision a meal without bread, but that doesn’t stop us from making better choices. Between tradition and new desires, French people maintain their habits while opening up to more interesting options. And the good news: with einkorn bread, neither taste nor pleasure is compromised. On the contrary, one rediscovers bread in a new way—more digestible, more nourishing… and still just as delightful.
