Preparation of the tomatoes
Using a knife, cut off the tops of the tomatoes (save the tops). Carefully hollow out the insides with a teaspoon, preserving the removed pulp: be careful not to puncture the tomatoes. Salt the inside of the tomatoes and turn them upside down on a plate to drain.

Preparation of the stuffing
Peel the garlic and shallot. Remove the germ from the garlic and chop it. Finely chop the shallot. Drain the tomato pulp to remove excess water and chop it into small pieces.

Cooking the garlic/shallot/tomato mixture
Preheat the oven to 410°F (210°C). Put the butter and 1 tablespoon of olive oil in a pan. Brown the shallots and garlic. Add the tomato pulp, sprinkle with parsley and oregano. Season with salt and pepper. Simmer over low heat until most of the liquid has evaporated (about 8 to 10 minutes).

Preparation of the final stuffing
Meanwhile, finely chop the cooked ham. Place it in a mixing bowl with the ground beef and sausage meat. Add the garlic/shallot/tomato mixture and knead well. Mix in the whole egg and cream. Season again with salt and pepper if necessary.

Stuffing the tomatoes
Fill the hollowed tomatoes with this stuffing and place them in a greased baking dish. Cover the tomatoes with their tops. Drizzle with 2 tablespoons of olive oil and sprinkle with breadcrumbs.

Baking the stuffed tomatoes
Bake for about 45 minutes (if the tops of the tomatoes start to brown too much, cover with aluminum foil to finish cooking). Serve hot with rice or a salad.

Once cooked, allow them to cool completely at room temperature. Then, place the tomatoes on a baking sheet spaced apart so they don’t touch, and freeze. Once the tomatoes are fully frozen, transfer them to freezer bags or airtight containers, and label them with the date. They can be stored like this for up to three months.

The oven is the best method. Preheat your oven to 350°F (180°C), place the frozen tomatoes in an oven-safe dish, and cover with aluminum foil. Let them heat for about 30 to 45 minutes. Removing the foil towards the end can help them crisp up a bit.
